A delicious pulled pork recipe from Bay Haven Farm/Practically Country!

Slow Cooked Pulled Pork
1 cup Roasted Garlic Rub (recipe below)
1 6 lb pork shoulder (picnic roast or butt roast) from the Berkshire pigs at BHF/Practically Country

Preheat oven to 275 degrees F. If necessary, trim excess fat from top of pork (not usually necessary)
leaving a 1/8 inches thick layer of fat. Spread Roasted Garlic Rub all over pork. Put pork fat side up in a
roasting pan and cover completely. Place on middle rack of oven for 6 to 8 hours. Transfer roast to
cutting board and let stand 15 minutes. Pork will fall apart. Pull into shreds with tongs. Cover with
homemade BBQ sauce (recipe below) and serve!

Roasted Garlic Rub
1 cup roasted minced garlic
5 T salt
2 T mustard powder
4 T chipotle or other spicy pepper powder
2 T dried thyme
5 T dried rosemary finely chopped
Lemon Zest
2 1/2 t black pepper
Combine all ingredients well. Rub over pork. 

Homemade BBQ sauce
Wet ingredients: 
4 c tomato sauce  
1 c cider vinegar 
1 cup coke 
1/4 c steak sauce  
1/4 c yellow mustard  
1/4 c lemon juice 
3 T molasses 
3 T soy sauce 
3 T Worcestershire sauce
1 t Tabasco sauce
1/2 t liquid smoke

Dry ingredients:
1/2 c dark brown sugar
1 T chili powder
1 T black pepper  
1 T mustard powder
2 t garlic salt
1 t dried onion flakes
1 t cayenne pepper
1 T salt

Combine all the wet fixings in a large, heave, nonreactive saucepan and slowly bring to a boil uncovered over medium heat. Meanwhile combine the dry fixings in a bowl and mix. Reduce the heat and stir in the dry fixings into the sauce mixture. Gently simmer the sauce until thick, concentrated and richly flavored, about 30 minutes. Use right away, or transfer to jars, cover and cool to room temperature, and refrigerate. makes 4+cups.
